Profile

Polyrhythm Brewing is new on the craft beer scene in Edmonton, Alberta, but has a dedicated pair in the form of Chelsea, previously the Edmonton Homebrewers Guild President, and Taylor, taproom manager. The brewery is based on the concept of Polyrhythm (hence the name) where each basic component intersects and enhances all the others. This is how the ingredients, styles, traditions, expectations, and desires of craft beer drinkers in Alberta criss-cross, inform, and enhance what comes from their barrels. Layering together, forming harmony, and generating the spectacular. Polyrhythm has produced a dozen beers in their brief time and a broad sampling of them is available in their Edmonton tap room or a limited supply can be picked up in cans. The 808 takes inspiration from the ubiquitous drum machine sound from the 1980s, bringing flavours that are loved by all. Warm caramel and toffee, with toasted elements. Serves well at 6°C and can cellar for six months.

Look

Pours a dark amber colour with a fairly clear body and low carbonation. A thin ring of off-white bubbles is all that remains on top of the pour.

Smell

The sweeter elements of toffee and caramel are present but they have an odd dancing-partner: a smoky, earthy aroma that comes from the hops, changing the overall aspect of this beer.

Taste

The flavours of caramel and toffee are minor players on this stage. The hops are going to dominate your palate, delivering a bitter, cut root flavour with a touch of green leafiness floating around. It overshadows everything else, letting the sweeter elements play in the background and lending a dry aspect to the body. The tasting is speedy, so you’ll taste the bitterness and then notice it’s left the building.

Pairing

Definitely a good partner for the well-stocked cheese platter. Skip the gouda so you aren’t overpowered.
