Profile
The gateway to the Rocky Mountains is located on the Trans-Canada Highway and it’s called Golden. Everything west of this small hub is god’s country and it sports some of the greatest land known to man. White Tooth Brewing has distilled this idea down into a nectar and sealed it in glass bottles. They want only paper for it. Once you’ve turned Kicking Horse into your personal ski-lodge, head down the highway to the White Tooth tasting room and get a pint of it into your belly, or get a bomber of your favourite brew and head back to a log cabin with a roaring fire. Listen to classic rock. Thread the Needle combines the bedrock flavours of toasted grains with an array of spices including coriander and szechuan pepper for a beer that’s hearty and surprising. Serves well at 6°C and can cellar for three to six months.
Look
Pours a rich, golden colour with a clear body and low carbonation. A thick head of foam at the pour quickly recedes to a ring of bubbles around the glass.
Smell
The coriander and szechuan pepper all but leap out of the can and knock you down. The spices are strong and the underlying grains of the malt are present but hard to get a clear read on.
Taste
Following what the nose is telling you, you’ll get a lot of spice up front. The coriander and pepper are powerful but they’re well balanced by the lemongrass and malt. The initial taste might shock you, but give this one a second to find its footing. Light in the body and with a flavour that strikes hard and fades away fast, this beer is one wild ride. Make sure to serve this one up cold.
Pairing
The spices make this beer a perfect candidate for the cheese & meat platter, but you may also consider rocking a piece of Apple Pie with cheddar. Yes, we know that sounds crazy.
