Profile

The beginnings of Brasserie Dieu du Ciel occurred during a time that is ancient history to all, even those who lived through it. The early 1990s was a raucous time of cultural upheaval - even if television didn’t make it appear so. Jean Francois Gravel began his own contribution to this upheaval in 1991 when he began experimenting with a home brewing kit. He quickly decided that making beer was going to be his life’s work. It took until 1998 to get Dieu du Ciel on its feet and pouring pints. By 2005 the production was roaring and demanded the opening of another production facility - so the second brewpub was constructed. The past decade has seen a steady increase in their position and the number of beers they’ve created (over 500). The Blanche Du Paradis is witbier spiced with coriander and orange peel for a fruity beer with a backbone of toasted bread. Serves well at 8°C and can cellar for around six months.

Look

Pours a pale yellow colour with a clear body and low carbonation. Only a small froth of large bubbles around the edge of the glass after the pour.

Smell

The wheat malt really strikes out and wakes up your nose, but it’s quickly joined by the zesty orange peel and coriander for a pleasant, toasted, and balanced aroma.

Taste

For as strong as the wheat malt is on the nose, it’s a bit of a surprise how far back in the flavour you’ll find it. The coriander stands in front of everything, quickly joined by the orange peel and they dominate the taste. But the wheat and floral elements are well represented, making for a pleasant flavour that has a winter solstice attitude that still enjoys being quaffed in the sun.

Pairing

A great beer to complement a shrewd sushi order - make sure to include some smoked salmon.
