Profile

In 2007 the ambition of homebrewers Jeffrey Stuffings and Michael Steffing grew beyond what a garage full of bottles could contain. Packing up the show and moving to Austin, the two (who happen to be brothers) started Jester King. Based on the farmhouse brewery of old, Jester King has focused its small batch efforts on the more niche styles commonly associated with farmhouse brewing and made a masterpiece of their craft. Since 2013 they’ve focused on mixed culture-spontaneous fermentation brewing, embracing the power of nature to generate unique tasting beers. Now two dozen beer-lovers work the farmhouse and their beers are starting to appear on the world’s slates. Le Petit Prince is based on common table beers that were served in Europe in the days where normal water wasn’t entirely safe to drink. Mild levels of alcohol with a crisp body, perfect for quenching your thirst or as a session beer. Serves well at 8°C and should be enjoyed fairly soon.

Look

Pours an incredibly pale yellow colour approaching colourless. Slightly hazy body and low carbonation, with a thin ring of bubbles around the top of the glass.

Smell

You’ll swear you’ve stuck your schnozz into a glass of your favorite sour - slightly fruity with a yeasty kick that sizzles the nostrils.

Taste

The aroma will make you think sour, but the flavour takes a much milder approach. Some of what you’d expect from a sour, but with a tangier kick and sweeter flavour. The body is light and has an astringent mouthfeel - the whole flavour experience hits like a whip crack and then it’s gone. Give this one some time on the palate to soak up everything that’s happening.

Pairing

Bearing some resemblance to the flavour you’d expect in a sour (but with less punch) your best bet is to dig into some liberally salted meat from the grill with a basic salad.
