Soren Eriksen, a humble home-brewer who got his start from the classic Coopers Homebrewing Kit given to him by his wife on Christmas Day, founded 8 Wired Brewing in 2009. It was during these early stages of New Zealand’s craft beer revolution that a mantra was conceived, and 8 Wired would brew beers that were new world interpretations of old world styles.A great way to introduce craft beer drinkers to a variety of traditional brews with a modern touch. The Rendition is based on an age old monastery beer. Imagine a Belgian monk brewing beer within the walls of a Trappist monastery, then drinking that beer and walking around the halls laughing and singing, before passing out in their chamber. It’s a funny circumstance that most likely happened, since monks also made their own bread and cheese. They didn’t get out much, and thankfully you don’t have to be a monk to enjoy this beer!
A light, caramel colour, some haze and a lot of active carbonation that leaves a large tower of cream foam head. Pour extremely slow, allowing the head to reduce as you go.
Immediate smells of caramel, baked biscuits, semi-sweet bread and hibiscus flower. Pleasant dry fruit, musty, earthy, herbal aromas flood the senses as well as a slight funkiness brought out by the Brettanomyces yeast.
With the use Styrian Golding dry hops and Brettanomyces to re-ferment in the bottle, Rendition pays a friendly homage to the tradition of the drunken monk with a strong taste and a robust, dry finish. The Styrian hops and Brettanomyces yeast create an exquisite palate that changes after every sip. Initially, the taste is bready with traces of nuttiness, spice and grassy, floral inflections. Dry finish, with a teaming, tangy, orange bitterness that doesn’t linger. Serve between 5-7C.
A strong Belgian beer pairs very well with other strong flavours. Aged cheese, cured or BBQ meats and spicy foods are all excellent. It also helps accentuate mild, creamy cheeses like Gouda and salty snacks like crackers or popcorn.
