Strong aroma of malty sweetness and funky yeast, the grapefruit and citrus aromas are strong, and the rest of the fruit tends to muddle together into one sweet fruit smell.


The sourness is punchy and will make you wince if you’re not ready for a strong kick. The floral hops and sourness drown out the fruit a bit, at least at the first taste, but the grapefruit and pineapple get some air time as the sour eases down, especially after the swallow. Slightly dry mouthfeel and some minerality left behind. The malty backbone can be picked up once everything else fades off.


A good candidate for a well stocked charcuterie board, include some smelly cheese to really get it going.


Pours a light golden colour with a slightly hazy body and low carbonation. Only a thin ring of small bubbles around the top of the glass for a head.

Matt Potts started out making craft beer in a home-kit his wife gave him for christmas. But soon, working in the dim garage just wasn’t cutting it anymore - it was time for bigger and better. The first pints started pouring in the brew works in November of 2007. It went off like a rocket ship. Destihl quickly became a well-respected craft beer organization, acting as a north-star for many in Illinois. By 2015, demand for their beer could no longer be met with their old brewing facility and a new brewery and beer hall were constructed. Two years later one of the largest beer production facilities in Illinois opened up to the public. Now their work is making its way across the 49th parallel and to all the provinces, and you can sample their skills first hand. Synchopathic is part of Destihl’s wild sour series, combining tart and acidic sour ale with citrus forward, fruity dry hopped ale. Tons of great fruit aromas and flavour including grapefruit, orange, and tangerine, with piney hops that are low in bitterness. Serves well at 8°C and should be cracked open fairly soon.
