Profile
Smell
Lightly toasted biscuit and floral hops are all over the top of the nose on this beer. Anything subtle is washed out by the high boozy note.
Taste
A lot of hops right up front, filling the palate with pine and floral characteristics. These ease up a touch, but not by a lot. Very heavy on the hops with a small kick of citrus on the backend. The high alcohol also washes out much of the flavour fairly quickly, so be sure to enjoy it slowly. Mouthfeel is mostly smooth with a grassy aftertaste.
Pairing
Definitely a candidate for a spicy Bun Bo Hue soup.
Sight
Pours a light straw colour with a hazy body and medium carbonation. A thin head of white bubbles on the pour quickly disappears.

Description
Matt Potts started out making craft beer in a home-kit his wife gave him for christmas. But soon, working in the dim garage just wasn’t cutting it anymore - it was time for bigger and better. The first pints started pouring in the brew works in November of 2007. It went off like a rocket ship. Destihl quickly became a well-respected craft beer organization, acting as a north-star for many in Illinois. By 2015, demand for their beer could no longer be met with their old brewing facility and a new brewery and beer hall were constructed. Two years later one of the largest beer production facilities in Illinois opened up to the public. Now their work is making its way across the 49th parallel and to all the provinces, and you can sample their skills first hand. The Haze of the Dead is an Imperial IPA with powerful Citra and Simcoe hops and a kick that is no joke. With plenty of evolving flavour this is a perfect brew for kicking back in the hazy dark. Serves well at 8°C and should be enjoyed soonish.
