Smell
The funk of that Brett yeast overpowers nearly everything else, but you can catch a whiff of some sweet fruit and green, leafy hops in the background.
Taste
Possesses the classic funky flavouring of the Brettanomyces, similar to what you’d expect from a sour ale, but with less oomph. Some sweet fruit flavour on the back end makes for a nice balance. There are some hops kicking around, giving off a touch of floral flavour in the background of your palate. Finishes up with a slightly astringent and sizzling kick, with a touch of fruit left behind.
Pairing
Definitely time to break out the cheese platter and the stinkier, the better!
Sight
Pours a light yellow colour with a hazy body. A frothy, bubbling head comes out of the can but resolves to only a small ring around the glass.

With over a decade brewing craft beer in the heart of Old Toronto, Bellwoods Brewery has emerged from the fiery nexus of craft brewing competition hell to become a multiple production brew-house with beers crossing the nation. Mike Clark and Luke Pestl leapt into their own label after a few years spent working in other craft operations and made a name for themselves through pure adrenaline mixed with medium roast. In their frantic early years, Bellwood focused on wild ale recipes often utilizing the snappy Brettanomyces yeast for sour, funky beers with character. Once their barrel-aging operation was on-track, the group opened up their beer goals and now their taps run the gamut from quirky Saison through to rock-solid Pilsner. The Brettal Head relies on a long fermentation process and Brettanomyces yeast for a unique and snappy pale ale experience. Serves well at 8°C and should be cracked soonish.
