Profile

By the Boot Straps is a Double IPA emerging from the collaboration between Dandy Brewing in Calgary, Alberta and their good friends Badlands Brewing Company in Caledon, Ontario. Dandy Brewing is one of Calgary’s biggest craft brew success stories. There are more than a few operations that have kicked into gear in the past ten years, but Dandy has set itself apart through a consistent program of marque beers and a tight taproom experience that has tasty food to match their 20 tap selection. Badlands Brewing is an on-farm brewery that specializes in IPAs and farmhouse ales. Starting their work in an old calf barn, their success and farmer perseverance led them to a bigger, better brewery built on their land and brewing fundamentals. The Boot Straps is a Double IPA with new hop strains at every stage, fermented on Foggy London Ale yeast. Not only a team up but an experimentation that's sure to be tasty. Serves well at 8°C and you should get into it right away.

Look

Pours a golden yellow colour with a hazy body and low carbonation. A thin ring of bubbles around the glass is all that shows up.

Smell

A lot of muddled tropical fruit up front but this beer also has a funky kick in the backbone. There’s sweet, bready malt and a musty, earthy loam aroma.

Taste

This one is a funky IPA flavour that starts off subtle and builds on the palate. The fruit is tasty and forward, but it shifts away, letting a funky yeast flavour and piney hop come in. But those shift away as well, getting flatter and tasting of earth. A funky rollercoaster that comes and goes fast. Let it warm a touch before drinking so you can squeeze out all the different flavours.

Pairing

Pair this bad boy up with some serious spice to balance it out. Get yourself into the Szechuan with Chongqing-Style Dry-Fried Chicken With Chiles. It doesn’t kid around.
