Introduction

Evil Twin is not a particular brewery, but a set of ideas that works from five different locations across the globe. Founded by Jeppe Jarnit-Bjergsø in 2010, the company itself has been a nomad, moving where the winds of beer take them. After a few years of tumble-weed living, Jeppe moved his family to New York City permanently, and Evil Twin NYC began. Evil Twin is still dedicated to collaboration with brewers across the globe, and gives many nomadic craft brewers a home base when a project needs to be put on its feet. Now the experimentation with recipes and brewing techniques has gone to a whole new level. It also means that getting your hands on Evil Twin beer is a lot easier. Dozens of styles and flavours are available year-round. The Sailor is an American-style IPA, leaning toward big flavour and wild hop experiments; this beer is double dry-hopped for big tropical fruit and typically evolves on the palate. Serves well at 8°C and should be enjoyed right away.

How it looks

Pours a pale yellow colour with a slightly murky body and low carbonation. Almost no head forms from the pour.

How it smells

The typical combination of an American IPA - you’ve got big, juicy tropical fruit aromas and hops that smell of pine and green leaves.

How it tastes

A more mild flavour than the nose would indicate, but the smell telegraphed the combination of fruit and hops. The sweeter tropical flavours are dominant though, pushing the hops back and giving the impression of weak fruit juice. The hops still have some evolution, opening up on the palate and giving more floral notes. Mild and tasty IPA!

Recommended food pairing

Classic IPA demands classic pairing - get into something spicy and savoury to offset the hops.
