Gustav Dose spent the early parts of his life stomping around the gardens of Taiwan and Japan. As he grew up, his travels took him to all the brewing sites around the world, learning the techniques of each culture and what made their beer unique. Eventually settling down, Gustav decided to land in Bozeman, Montana. Once the dust cleared, it was time to set up his own brewery, and take what he’d learned to the next level. Relying on ancient traditions and the drive to build a brewery backed by living cultures, Gustav crafts new discoveries from ancient roots. Forming a crew, Mountains Walking emerged with respect to the harmony needed to create amazing beers. More than two dozen beers now come out of the unique genius of Dose and the hard work of his crew. Chopping Wood is a dark lager, but that means a beer with roasted flavour, not necessarily heavy body. The ‘Wood is light, flavourful, and smooth. Serves well at 8°C and can cellar up to a year.
Pours a dark, coffee colour with no light passing through the body. Low carbonation and a frothy head from the can that quickly hits the road.
A smell of roasted grain that verges on burnt, a dark roast of coffee beans, molasses, dusty baker’s chocolate, and wet loam.
This beer has a slightly watery start, but then the fun shows up. A combination of smoked wood, flinty salinity, roast coffee beans, and a very light touch of caramel malt. All of this comes through in very faint waves and you’ll need more than a few sips to catch it all. It vanishes quickly off the palate and leaves behind only a slightly salty and dry finish.
A smoky flavour that has a touch of salinity would best pair up with salmon sashimi or some kind of salmon roll. Stay away from smoke salmon - you’ve already got that flavour covered.
