Profile

Founded in 2018, High Key Brewing is the handiwork of Daniel Rommens and Madline Conn. Built on a foundation of simple, straightforward process that delivers high-quality beer, High Key has been seeing a lot of success since their arrival. After four years they began searching for a new location to accommodate the amount of uptick that was demanded in their production cycle. Early 2023 saw them move into a new facility and up their staff to 25 dedicated souls producing tasty brews. The taps in their new room run the gamut of styles, with a special attention paid to their flagship Pink IPA and the London Fog Porter, two beers that have always been a hit since they emerged from the vats. High Key refers to bright lighting in a scene, and this brewery is certainly a bright light within the Saskatchewan brewing scene. The Johnny Kölsch follows the traditional German style to the letter. A soft mouthfeel with a spicy body and snappy hop profile that is easy to drink and exciting to explore. Serves well at 8°C and can cellar for up to six months.

Look

Pours a beautiful gold colour with a clear body and medium carbonation. A thin layer of frothy bubbles forms a nice cap on top.

Smell

Most of the nose you’ll pick up off this beer is a slightly earthy spice aroma with a touch of citrus and green leafy hops. Mild in aroma and in flavour!

Taste

A lot of mild spice and hoppy snap right up front on your palate. But it all eases off quickly to a more mild malty flavour that incorporates the spice and hops into a unified note of flavour that’s pleasant without being boring. The soft mouthfeel is something the beer relaxes into from an initial frizzy acidic feel, becoming slightly sweet and easy on the taste buds. Finishes off gently with a touch of dryness.

Pairing

This is mild enough that almost any tasty pub food would work, but there’s also great potential for a personal pizza with some intelligent cheese choices - either mozzarella or feta will be a good option.
