Smell

There's a sweet, fruity aroma that’s difficult to pin down to any one fruit but it’s almost merged completely with the aroma of wet clay and some leafy quality.

Taste

The flavour is much more straightforward than the nose would have you believe. The fruit is still muddled and difficult to identify, but it’s light and sweet, mixing with a piney hop flavour to deliver a well-balanced and simple Pale Ale taste. The mouthfeel is fairly dry and it leaves behind a touch of the pine when it’s all said and done.

Pairing

Do yourself the favour of pairing this up with a Korean Spicy Seafood noodle bowl and have an awesome night.

Sight

Pours a golden colour with a hazy body and low carbonation. A puffy head of foam from the pour quickly becomes a thin ring around the glass.

Description

It may be wrong to call Equilibrium Brewing mad science, but they did get their start during their time at MIT by building a hot-rodded brewing setup on a friend’s stove top. Proper brewing began in 2009, but it would take close to a decade before the Equilibrium crew was able to purchase a proper facility and start canning their beers. By doing a weekly release of small-batch craft beer, they gathered a following of people who lined up around the block to get their hands on it. They quickly outgrew their original facility and opened up their custom built taproom and brewery in Middletown in 2019. Now they live the life of constant collaborations with other New York breweries and beyond, win awards, and continue to service long lines of thirsty beer lovers. The Photon is an American Pale Ale with tons of hops that deliver big, fruity aromas and flavour. A touch lower alcohol makes for a crushable pale ale. Serves well at 8°C and should be enjoyed promptly.
