Profile
Smell
The punchy hop profile comes through loud and clear, delivering tropical fruit aromas, including pineapple and grapefruit. A hint of warm, biscuit malt and some wet grain to boot.
Taste
The hops come out of the gate with a bang, delivering on a slightly herbal, floral character that eases off the gas and lets the fruit make a showing. The tropical juiciness is muddled, blending all the fruit together, but a touch of citrus zest helps to keep it from getting over-sweet. In the background you can taste a touch of the bready malt. All in all a snappy taste that finishes quickly with a touch of astringent mouthfeel.

Time to get yourself some street tacos with the spicy kick to complement the hoppiness of this beer.

Starting in 2013 with some whimsy and a commitment to great beer, Belching Beaver has maintained a goofy joy while also producing a ton of award winning craft beer. Over 90 different beers have come out of the split brewing setup in California. A few have made it on to the permanent slate, but many are experiments or limited releases. Belching Beaver embraces the experimentation, letting their imagination guide them to new ideas and variations on classic styles, and when the public gives a hearty cheer for a winner, they consider making it permanent. In this, they’ve found a way to be spontaneous and reliable. It’s also a formula that has allowed them to deliver beer to 12 different states and start making a name for themselves in Canada. The Phantom Bride is a limited release IPA named for the Deftones song of the same name. Made with a blend of hops to create a strong citrus backbone with high hop flavour, it serves well at 8°C and should be enjoyed promptly.
