Coming on a decade brewing craft beer in the heart of Old Toronto, Bellwoods Brewery has emerged from the fiery nexus of first-five small business hell to become a multiple production brew-house with beers crossing the nation. Mike Clark and Luke Pestl leapt into their own label after a few years spent working in other craft operations and made a name for themselves through pure adrenaline mixed with medium roast. In their frantic early years, Bellwood focused on wild ale recipes often utilizing the snappy Brettanomyces yeast for sour, funky beers with character. Once their barrel-aging operation was on-track, the group opened up their beer goals and now their taps run the gamut from quirky Saison through to rock-solid Pilsner. Hot Wings is a pale ale in the American style, delivering crisp, clean body and sharp hop character. Serves well at 8°C and you should crack it open sooner rather than later.
