Profile

Founded in 2014, and making their brews atop the flowing plains of Saskatchewan, Rebellion Brewing Co. Is one of Regina’s hidden gems in the craft scene. It’s not often that you hear about great beer coming out of the heart of the prairies, but that simply means you don’t have your ear to the ground long enough. A little bit country and a lot of punk rock, Rebellion Brewing sports a half dozen year-round brews on their slate, and a dozen seasonals floating across the slate. A six of your favourites are ready for pickup, or you can get into a growler, even a keg. They’re here to make sure you’ve got tasty beer available every day and twice on Sunday. The Mega Lazer Cat is a twist on Rebellion’s seasonal “Cat’s Got Cream'' but with more depth to the sweet malt and creamy texture. Serves well at 8°C and can cellar in the beer fridge for up to six months.

Look

Pours a dark tan colour with mostly clear body and low carbonation. A thin ring of small, tea-coloured bubbles clings to the glass.

Smell

Sweet caramel, black cherries, candy floss, and a touch of wheat from the malt all mix into an almost cherry liqueur candy with a strong aroma of booze.

Taste

The flavour of this beer takes a pretty strong side step from the aroma. The sweetness is still present, but the fruit element moves over to more of a dried apricot or plum than cherry. The strong sense of booze from the aroma doesn’t translate to the palate. Smooth, sweet, aromatic - this beer is one tasty and interesting customer.

Pairing

An odd pairing but this would go well with a thick, warm, buttered slice of banana bread. Or some salt and pepper wings.
