Introduction

There’s not a lot of point to getting your hands dirty in the brewery if you’re not going to be having a good time. And that’s the driving force behind the Ross brothers craft brewing initiative: New Level Brewing. Have fun making beer and see where the ride can take you. No snooty ideas about what precisely a craft beer has to be, but an exploration of what it could be. So in 2017, the brothers started working to get their beer dreams off the ground, and lo, five years later, they’re making a few dozen regular beers, after more than a 100 different iterations have come from their vats. If you’re in the neighbourhood of southeast Calgary, you can pop into their taproom to sample a limited run of their beers or keep your eyes peeled at your local, as their work has begun to spread. The Hellion Lager is a clean, lean, and mean lager made with a marriage of Alberta and European malt. The result is crisp and snappy on the palate, perfect for pairing with spicy and simple dishes. Serves well at 8°C and can store for six months.


How it looks

Pours a pale golden colour with a clear body and low carbonation. A frizzy mousse of fine bubbles forms a thin cap on top.

How it smells

A sweet combination of earthy, grainy malt and a sharp kick of bitter, pine-like hop character along the edge. There’s also a hint of flowers and candy sugars in the background.

How it tastes

Very mellow flavour on this beer - most of what you’ll taste is going to be the slightly sweet, grainy malt and a hint of bitterness that is reminiscent of fresh cut leaves. But that taste shows up and takes off very fast, and you’ll be left with a slow ebb of slightly earthy minerality, like licking a shore-line stone. That may sound odd, but it’s pleasant and tangy. Slightly dry finish in the mouth.

A perfect pairing for just about anything you’d nibble on while enjoying a sunny patio. Get some nachos - how can you lose with nachos?
