Introduction

Only a few people have had to wage a bureaucratic war with the federal government to keep the beer flowing from their craft setup, but The Brewing Projekt is one of those few. Started in 2013, the Projekt was plagued with backlogs during the fall, and thanks to a stringent lease, the founders were staring down the barrel of losing their brewery before it ever managed to put a single can into the hands of a thirsty beer drinker. It took two years to get past government tomfoolery and finally start putting pints on the lumber. Their taproom opened its doors in April of 2015, and they've been brewing with a vengeance ever since. Now those days are well behind them, and The Brewing Projekt has knocked out hundreds of limited release beers, each and every year. The Totally Not Evil is a Doppelbock - a stronger version of the German-style “Bock”, slightly sweet and strong on the ABV. Serves well at 8°C and can cellar for up to a year.


How it looks

Pours very dark, essentially opaque, with low carbonation. A thin ring of chocolate tinted foam around the top of the glass.

How it smells

A heady mixture of sweet malt, with caramel and sugary notes, and a boozy strength that gives it a strong perfume.

How it tastes

The sweetness of the malt eases off on the palate and reflects more of the syrupy heat in the alcohol. There’s a touch of green, like fresh cut leaves, that displays itself on first taste. The taste shows up fast, and leaves fast. There’s a slightly flowery taste that sneaks in as the back-half finishes off. Simple flavours but they work well together and leave a fairly smooth finish.

Recommended food pairing

Darker and sweet, this beer is best matched up with something fatty to bring in a balancing act on the palate - get into some double-cut pork chops with greens.
