Introduction

From the brewing floor of one facility emerged this newer, better one - Fair State Brewing Co-Op was started by Evan Sallee, Niko Tonks, and Matt Hauck when working for another cooperative felt closed down and not willing to collaborate. So our three intrepid brewers found a small spot of their own to start up a craft brewery in the hopes of making a co-op that was open to innovation and willing to let those who came and went to provide insight, assistance, and creativity. Now those fans of the beer coming from Fair State have an opportunity to help shape the kinds of beer experiences they’re having and keep a few good brewers in jeans and soup. Now more than two dozen unique offerings are available from the group. The Big Doink is the result of someone filling their hand with sticky hops and slapping you across the mouth with it. Big hop profile launches resinous pine into your nostrils. Serves well at 8°C and should be enjoyed right away.


How it looks

Pours a dark golden colour with mostly clear body and medium carbonation. Thick, pillowy head out of the can stands on top of this beer for a long time.

How it smells

Well the brewer advertises this as a dank, piney hop beer and there’s very little left to the imagination. The hops come out of the glass like frogs on a dynamite pond.

How it tastes

Well obviously it’s hoppy. But it does bring more to the table, with a citrus flesh and zest combo to off-set the pine resin that rules this beer. But as it warms the hops do open up and offer more, some flowery notes and a long run on the fruity elements. Smoother than you’d expect but it does cut off with an astringent finish. A real rollercoaster IPA.

Recommended food pairing

Very hoppy and bitter - so get into something with a spicy kick. When was the last time you let Vindaloo rule the night? Get into it.
