Gustav Dose spent the early parts of his life stomping around the gardens of Taiwan and Japan. As he grew up, his travels took him to all the brewing sites around the world, learning the techniques of each culture and what made their beer unique. Eventually settling down, Gustav decided to land in Bozeman, Montana. Once the dust cleared, it was time to set up his own brewery and take what he’d learned to the next level. Relying on ancient traditions and the drive to build a brewery backed by living cultures, Gustav crafts new discoveries from ancient roots. Forming a crew, Mountains Walking emerged with respect to the harmony needed to create amazing beers. More than two dozen beers now come out of the unique genius of Dose and the hard work of his crew. The Grazing Clouds is an eastern American style IPA, but with a laid-back character. Easy on the hops, but delivering on the subtle fruits, this is a soothing, easy-drinking IPA. Serves well at 10°C and should be enjoyed promptly.
Pours the colour of peach juice with a totally occluded body and light carbonation. A thick head of bubbly, white foam rests on top like a chunk of ivory.
Piney, resinous hops on the top of the nose, muddled tropical fruit, a slightly flowery aroma in the background, and slightly sweet malt.
Much milder than the nose would suggest, this beer almost comes across as fruit juice on first taste. The fruits are still muddled, but tangerine and guava are most accurate. Some floral hops show up but are definitely the wall-flower at the dance. The whole taste is light, slightly sweet, with a touch of rind. Smooth mouthfeel and an aftertaste of citrus lingers.
This is a fairly mild, fruit-forward IPA, so aim for zesty rather than all-out spicy. A tossed salad with honey-lime dressing would do well.
