Introduction

A texan took 300 pounds of lemons and limes, put the juice and zest into a big stainless steel container and brewed up a summer beer the likes of which only Kings had tasted before now. Jester King goes big and being from Texas that makes perfect sense. These big hats have more styles of beer in their back pocket than a discount liquor store and all of it is handcrafted goodness. Their Austin taproom makes it all available in person, alongside an award winning menu that combines their brewing and gastro elements. Brewery and Farm tours complement a pint combining a healthy walk with a tasty beer.

Now we have Provenance - the sixth batch of a high citrus Saison ale that crushes 300 pounds of fresh flavour into a bottle for your enjoyment. Light, fruity and snappy with an earthy appeal. Serves well at 8°C and can cellar for half a year.

How it looks

Pours like clear liquid gold, easy on the carbonation and with a thin layer of white foam to ring the top.

How it smells

Citrus is forward on the nose which comes as no surprise. The lemon and lime dance well together, but the sharper lime comes across more cleanly to the nose. A hint of the rustic, barnyard scent common to saison sneaks through.

How it tastes

Flip the script from the nose - the lemon wins the contest this time. The sour and bright zest of the lemon rings clear, a strong malty wheat taste plays through, along with a crackling snap of saison yeasts to wake up the tongue. The two citrus elements balance each other well, keeping it from getting too sweet or sour, and the whole taste ends with the hay and leathery character common to the style.

Recommended food pairing

A saison with such a light flavour and strong on citrus demands quality catch from the sea. Grilled mahi-mahi with coconut rice is a dream on a plate.
