It began as a group of home brewers with a hunger for interesting bottles to crack open. Now Edge Brewing serves up nearly two dozen brews alongside a fusion menu rife with sumptuous meat platters and baja tacos. The handiwork of Marcus Bezuhly, Bryan Garcia-Brown and Tony Knipe, Edge combines years of craft brewing expertise and restaurant savvy to brighten the lives of Boise residents and weary travellers. A straightforward pub sporting an impressive rack of taps in the Maple Grove area, Edge has been pouring pints since 2013. The Edge IPA follows the trail of the American IPA but carves its own niche. The hops are apparent in the flavour of this beer, but less so in the nose. The smell is rich and fruity but the flavour leans into the hop character, giving it a sharp change as you taste and snaps it off for an abrupt finish. Serves well at 6°C and should be enjoyed promptly.
Pours a light golden honey colour with medium carbonation and a frothy head of white foam that pillows up big, then fades away.
Sweet and fruity up top with syrupy cherries and tropical touches of mango. A touch of sharper booziness rolls around the nose and a hint of floral hops around the edges.
Tastes of something cask aged right from the jump. Oak and cedar flavouring combine with a more resinous pine hop flavour to give the beer a woody taste over all. Sharp across the palate and carries a bitter after taste. A hallmark of the American IPA — a quickly evolving flavour, strong scent profile, more bitter resinous tones and an astringent finish. The mouth feel is much like a straight dry beer. Works for the IPA lover, but tricky from the impression given by the nose.
Definitely dig into something with richer flavours and fatty content. A well buttered lobster tail or plates of scallops would be a good complement.
