The Blackberry Farm Brewery has built its philosophy and its beer on the rustic history of old world farming. Depending on the slow, patient husbanding of simple ingredients, Roy Milner and Andrew Noye create beer that stops time around you, letting the quality and craft strike a notch into the heartwood of the soul. BFB uses a technique of re-fermenting their beers in the bottle, to develop a carbonation that is smooth and subtle. They deliver five permanent beers - belgian style ales, german ale and their signature pale ale. Now they give us the seasonal creation of the Noble Cuvee - a dry-hopped saison. Belgian saison is often a spicy, sizzling beer with a lot of activity in the mouth feel. BFB’s re-fermentation brings down the acidic feel of this beer, letting it deliver an evolving flavour to the discerning drinker. Serves well at 8°C and can cellar for half a year.
Pours a cloudy light apricot colour with excited carbonation and sports a head of off-white pillowy froth that quickly recedes to a thin layer up top.
The top of this beer smells of fresh farmhouse apples picked for the table, a touch of citrus zest, strong green floral hops and a bit of grain malt. A bit of white wine character floats through the scent - fresh pressed white grapes.
The Noble has quite a dry delivery which causes the flavour to open up rapidly on the palate. The sweet and tart green apple comes on strong in this beer, joined by the bite of all saisons and the earthy character unique to this beer. As it changes on the tongue the spices become more apparent and the resinous hop jumps out, bringing a sharp change through sour to a more bitter bite. Underneath it all is a grain malt flavour as you smack your lips.
A sweet saison should be paired up with something earthy that has strong flavours - break out the charcuterie board and pack it with meat.
