Introduction

The people of the mountain return to Canada Craft Club to bring another of their unique inventions to your table. Jason and Aric of Folding Mountain Brewing distill the character of their environment among the Rockies down into their craft – singular, impassive, and comfortable in slow deliberate action. And as with all their beers, beneath the calm surface exits incredible character, much like the beer's namesake ridgeline. Juniper Bock is a Strong Ale, sharing much with the Belgian Strong Ale of old. Grain and cereal flavours with a rich, dark fruit undercurrent. Smooth bodied and nurturing with each sip. A very mild hop character and playful flavour in the mouth that doesn’t linger too long. The Juniper Bock is the perfect beer for long nights, looking out into the blowing snows as the fire next to you crackles and warms the soul. Serves well at 8 C and can spend a few months on the shelf.

How it looks

The Bock pours a rich amber colour with a thin line of off-white foam that quickly disappears, leaving active carbonation.

How it smells

A tone of rich caramel relaxes into a reminder of well-aged sherry that has been warmed by the hand. Stone fruit left on the vine, plump with rich juice and a hint of leafy hops in the back. A touch of wheat or grain rides in softly as the final note.

How it tastes

The Juniper Bock has all the best qualities of a Strong Ale in the Belgian style, but unfiltered it carries some character all its own. Rich, wheaty taste combined with toasted caramel, dark stone fruit and a hint of hop. This Ale reminds one of complex brandy and mulled wines. A touch of bitterness comes in at the end of the taste to cut off the complex flavours, so you can enjoy the taste experience without it evolving into something weird or incongruent.

Recommended food pairing

Find yourself some slow-roasted Jamaican jerk chicken and a pile of dirty rice to go with it. If you just want some nibbles to stay light on your toes, get a smoked cheese platter.
