Profile

Barleywines are the quintessential and pinnacle example of luxurious brewing. A style with written references in the 'London and Country Brewer' dating back as far as 1736, where it was stated that the brew should be of “vinous nature.” These beers come from the first wash of the wort, the highest strength, followed with barrel ageing for a year. While the methods have evolved over the years, the end goal is still the same; a high alcohol brew with a warming effect and astonishing complexity. Double Mountain Brewery, who are celebrating their 11th year in business, released this barleywine which has been aged in bourbon barrels. Located so close to the infamous Yakima Valley, they have access to great, fresh hops and proudly use Canadian malts as often as possible. No need to rush here, your patience will be rewarded in cellaring or sipping. Enjoy at your leisure, serve around 12 C.

Look

Fine leather and rich mahogany with a thin, deep and dark head.

Smell

Big, boozy bourbon barrels with rich caramel, dried dates, toffee, candied apples and molasses pop out of this vinous brew immediately. Notes of vanilla and candied banana follow and present a complex aromatic profile that will just get better as the brew comes up slightly in temperature.

Taste

Oh so smooth, dry and deceptive. Made using an English style grain bill, and American hops, notably Cascade in the hop-back, before being sent into the still-wet bourbon barrels from Heaven Hill Distillery in Kentucky (still-wet meaning there's still bourbon in the barrel, where the marriage of beer and bourbon takes place). We find so many layers in this barleywine; bourbon, ripe red fruits, molasses, ripe blueberries, deep caramel, figs, leather-bound books and a hint of vanilla.

Pairing

Think of this as a wine to pair your meal with. The most celebrated pairing are cheeses, and Stilton cheese is a classic. Foie gras or gamey meats like pheasant or duck work really well, follow up with crème brûlée and enjoy the bliss!
