Introduction

Founded in 2012, Le Castor is a relatively new player is Canadian craft beer community. Ever since their humble beginnings, completing apprenticeships in Scotland and first tasting real cask conditioned ale, the brewery has been a labor of love, inspiration and commitment. Distributing beers throughout Quebec, it will only be a matter of time before Le Castor’s awesome line of year rounds and seasonals are seen across Canada. It’s a Saison like none you have ever tasted. The malt forwardness is nicely highlighted by the hops used, but neither components alarm the drinker with too much bitterness and body. Le Castor takes the popular taste of a Saison and places it in the background, allowing for an easy drinking beer that is very well balanced, even at 6% ABV. It defies what you’ve come to expect from Farmhouse Ales. Serve between 7-10C.


How it looks

A lot less hazy then other Saisons, and is a striking, golden yellow. A moderately carbonated beer. Once poured, it produces a half-inch of pearl white head, some lace and good retention.

How it smells

The usual farmhouse funk associated with yeasty Saisons is only subtle with the Rakau. The aromas of lemon zest and fresh cut grass are familiar, while butter, pine resin and sweet corn are new and inviting. The sugariness of the malt and wheat really break through as well, leaving a fragrance of baked bread.

How it tastes

The Rakau is smoother than most Saisons, with an initial hoppy bite that dissipates only to reveal a more malt forward flavor palate. The use of Belgian yeast can sometimes produce a floral aftertaste in Saisons and this beer is no exception, however it is not front and centre. Mixed in are hints of mellow citrus undertones such as lemon and orange peel as well as herbal, earthy spices like cracked peppercorn and coriander.

Recommended food pairing

Fried chicken, fruit salad and sushi are perfect complements. The slight tang of the Saison can also be paired with salty seafood dishes.
