Introduction

Saisons are as individual as the brewers who brew them. Saison is a philosophy more than a hard and fast style; it’s about brewing what is possible with what’s available. That said, they do all share some likeness that tie them together nicely in a category; • They are a rustic beer with a low alcohol percentage. Saisons were traditionally brewed in the early winter to quench the thirst of farmhands that would work in the fields the following summer so they were brewed simply and with the intention of a low ABV for easy drinking in the fields. • They are produced with indigenous ingredients. Local yeasts were originally used in producing these beers and brewers propagated them themselves. • They have a light body and a dry finish. • The yeast is king and it’s allowed to do the work. Brewers create the right environment and allow the yeast to create the flavours and carbonation. Ask 10 people to define a saison and you’ll likely get 10 different answers but this is a very basic explanation of what makes a saison, a saison. This beer is a very nice saison that has a slight twist on the traditional Wallonian interpretation of the style. The carbonation is slightly less intense and the yeast character is more on the fruity side.


How it looks

This beer pours a beautiful pale golden amber with a white, soapy head with average retention and nice lacing. This is an active beer with lot’s of visible carbonation.

How it smells

Smells of grainy pale malt, sharp and funky yeast with notes of soil, grass, barnyard and some earthy spices coming through and blending with floating fruit aromas of pear, apricot and some aged lemon. Some mild black and white peppercorn spice show as well with leafy and herbal hops aromas.

How it tastes

The taste starts with soft pale malt followed by fruit character of apricot and lemon. On the finish, there is quite an earthy funk and some very mild white peppercorn spice. This light-bodied beer is crisp and clean with nice carbonation and finishes quite dry.

Recommended food pairing

This beer goes wonderfully with a simple roasted chicken with garlic and herbs. The lemon and stone fruit flavours complement the roasted bird and pull the earthy spices in the beer to the forefront.
